Food insecurity is defined as being without reliable access to a sufficient quantity of affordable, nutritious food on a daily basis. On a global level according to the United Nations most recent stats it is estimated that 795 million people face food insecurity on a daily basis. In the US alone that equals up to 1.6M people who face insufficient access to affordable and nutritious food daily. Here in Europe the number of people facing food insecurity is a 3.7M persons daily.
One of the reasons I took a break from Gastronomer was because I wanted to find the right direction and voice for this blog based on personal beliefs and values. We at Gastronomer believe in affordable and nutritious food while adhering to the fine dining experience. We do not believe that one has to be sacrificed for the other. This summer during the Olympic in Rio, world renowned Chefs Massimo Bottura of Italy and David Hertz of Brazil created RefettoRio Gastromotiva. Through RefettoRio Gastromotiva they were able to produce 5,000 meals daily using only those ingredients that would otherwise head for the trash. This brings me to the second purpose of Gastronomer which is sustainability through reduction of food waste.
According Food and Agriculture Organization of the United Nations (FAO), we throw away 1.3 billion tons of edible food per year. This translates to $750 billion in edible food thrown into landfills each year creating 3.3 billion tons of CO2 equivalents of Green House Gases (GHG) released into the atmosphere per year. Here at Gastronomer we are committing ourselves to not just creating recipes but also showing how to use food and the waste produced by transforming them into affordable and nutritious food that is also Gastronomer worthy. At the same time Gastronomer will show how to reduce our negative impact on the environment by helping to reduce the food waste that goes into our landfills.
Affordable, nutritious Gastronomer worthy food should not be a question of money but that of creativity and knowledge we hope to shared far and wide.
