Some food on the go memories are great and others bring about change. I remember working for a client who was literally based in the middle of nowhere. There was no access to cafes and diners to grab a quick lunch. I would have settled for a less than fancy place as well. What we did have was a cantina, but the food there was… let’s just say… not good. Honestly, it looked terrible and I could not bring myself to ever letting it pass my mouth. In that moment, I decided to take on the challenge and bring my own lunch to work. I have never looked back. In fact, even if there is a fancy restaurant I could eat at, I still prefer making my own lunch on the go. I know exactly what is in there and I am sure it’s a lot healthier than what I can find in a hurry.

As someone who needs variety when it comes to food and would not be able to eat the same lunch for 5 days in a row. Coming up with fresh and exciting “adult” lunchbox recipes every day for 5 days can be challenging. We already know that packing your own lunch is healthier and it saves a lot of money. This does not solve the issue of what to pack to work. Luckily, there are some great recipes you can create quickly and tastes great. No one has an hour in the morning to prepare one lunchbox, so only the ones that ticked all the boxes made this list. These are some of my favorite lunchbox ideas for adults on the go.
Grilled Brie and Peach chutney (Bon Appetit)
Adding a peach chutney to grilled brie sounds so much more exciting and makes it an entirely different meal. Before you dismiss the idea of peaches and brie, allow me to explain. Everyone likes a good grilled cheese, but it can get a little boring after a while. The slight sweetness of the peach really balances well with the slightly salty flavor of the brie.
Strawberries and Spinach
I am not a huge salad person, but there are some salads that blows my mind. One of these are a strawberry, feta and strawberry salad. Add a drizzle of balsamic vinegar and olive oil over and you have a winner. I like to add a few pieces of pecan nuts on top for some added crunch. If you are not in the mood for a salad, you can easily place this on top of some whole-wheat bread for a delicious on the go sandwich.
This recipe is going to require a small amount of preparation ahead of time. Luckily, a lot of what is prepared can stay fresh for up to a week. Even though the Binh Mi sounds like a complicated recipe, it is fairly easy to make for a delicious lunch on the go. Combine an airy baguette, pickled daikon, carrots, cucumbers and jalapeños with your favorite protein. This recipe tastes amazing and is a popular lunch option for Vietnamese locals.
You don’t have to do much to pasta to make it a great on the go lunch. If you don’t have access to a microwave, you can easily enjoy a pasta salad. One of my favorite pasta salad recipes include sundried tomatoes, black olives, capers and some mozzarella. It’s light, refreshing and it makes for a great summer lunch.
If you have a bit of time on your hands the night before, you need to try this recipe. It is packed with flavor and makes for a great adult lunch. Don’t worry, the whiskey won’t get you in trouble at work if you stick to the instructions and portions. You can also make this for dinner and use the leftovers for a delicious lunch the next day. Pack your bread rolls separately from the pulled pork and quickly assemble your sandwich at work.
If you are living on the lighter side of life and enjoy a veggie or two for lunch, this is the one. It does not sound very appealing at first, but sweet potato and broccoli comes together well when you add a miso dressing to the mix. This recipe includes some cooked rice, baked sweet potato and broccoli chunks and a miso and tahini dressing to balance all the flavors. It’s the perfect sweet and salty combination and is enough to keep you sustained until you come home from work.
There is nothing creamier than a smashed up white bean. At first glance, this bean looks pale and bland, but it does surprise with ample flavor. It’s actually buttery and smoky at the same time, which is a great combination. This is one of those recipes you can whip up in a flash for those days when you hit the snooze button way too many times. It’s light, yet filled with tons of healthy proteins and fats. You can use the canned white beans to make life a little easier, because they do take long to softer when you use dried beans.
I had to include a snack into this list because we do crave something around 3pm. These are much better for you than grabbing a cookie, but it tastes just as great. It will take you 10 minutes to make and you can even make a few ahead of the time for the whole week. It’s quick, easy and can be made in advance, which ticks all the right boxes.
There is no excuse to not pack your own lunch to work. You are going to save a lot of time and money. It is not always easier to grab some food from the café around the corner. Preparing healthy meals that sustains you is important. We are constantly rushing to the next meeting or working on a big project. There needs to be some kind of balance.
