Forever the Student
What I love about cooking is that there is always something new to learn. Even if you have made a recipe a dozen times there is always a new opportunity to learn. From Anthony Bourdain to Francis Mallmann I find it necessary to study food and cooking. The reason for this study is an intense desire to honor the food by preparing it in the best way possible.
My schedule as always has been crazy to put it mildly but so has been my wish to enjoy food in the best way. Over this holiday weekend I stopped by NIWA a Thai restaurant here in Firenze (Florence). In addition, I tried out a local restaurant and enjoyed pranzo (lunch) of fried calamari and shrimp.
As always I enjoyed each meal with a local wine courtesy of my local sfuso (wine shop). After my studies I decided to focus on the basics. I revisited my blueberry muffin switching out milk for yogurt which gives an excellent texture to the muffin. I made a beef stock with a mint and parsley. For next week I have decided to make pasta with a stillon, pine nuts and pears. A Farro and roasted summer vegetable salad rounds out my back to the basics.
