Green and Sexy
For this issue we will explore sweet green peas. In exploring sweet green peas I was blown away when I came across a breakfast frittata featuring green peas. Peas for breakfast was delicious and a nice change from the usual suspects. That discovery inspired me to create a pizza using a pea pureè instead of a traditional red or white sauce.
Sweet green peas are versatile and their hint of sweetness pairs well with Rosè wines which we will also explore in this issue. You can use peas in risotto, kedgeree, omelettes, pizzas, pastas, soups, salads, casseroles and curries. I have to admit I stopped just shy of making sweet green pea ice cream but I may have to try finding one just to put the wide gastronomic range of sweet green peas to the ultimate test.We have a wonderful recipe for sweet green pea is a salad with shaved asparagus as will as in a sweet green pea soup served with a cognac cream. We will even have peas in a main entreè that will leave little doubt of peas star quality. As always we have instructional videos and pairing tips. I even attended a Rosè tasting and spoke with several leading sommeliers about how best to pair Rosè wines with food and peas definitely is a winner.
