When it’s rainy weather today I like to curl up with a good recipe and experiment with flavors. Today I wanted to explore infusions. An infusion is the flavor that’s extracted from any ingredient such as tea leaves, herbs, or fruit by steeping them in a liquid such as water, oil, vinegar or liqueurs. The infinite numbers of flavor profiles that can be created in mind boggling. This time I wanted to keep things simple using my mini garden for inspiration.
I combined lemon, basil, sweet bell peppers and mint to infusion olive oils with the taste of summer. In the past I have used peppercorn, Meyer lemon and star anise to flavor vodka. When it comes to infusions there are no limits. Each time I create an infusion I try to be creative as well as adventurous.
Garlic and chili are wonderful in oils and vinegars. Fruits such as berries and oranges can add a flavor punch that can bring a smile to the most discerning palate. Summer is a time for exploration. Check out the infusions under our recipes tab then explore the possibilities on your food journey.
