Love the food but hate the work
Every time I visit my mom in New York I know that I will spend most of my time in the kitchen cooking, My mother is a great cook but she stopped cooking in the 1990’s. Yes, I am being serious. When I open my mother ‘s fridge on huge industrial freezer she has prepackaged or processed food. My mother cooking philosophy is if you cannot freeze it then it will not come through her kitchen. It is safe to say that my mother no longer enjoys cooking.
Preparation, shopping, cooking time and clean up are a few of the reasons that cooking is not on my mother’s list of favorite things to do. She is not alone in her reluctance to cooking. Cooking can be less cumbersome if you have the right tools. Slow cookers is my go to method for cooking delicious food and multi-task. This week I made a white bean and pancetta stew took 15-20 minutes to prep and I left it in my slow cooker to cook for 6 hours. At the end of the day I had a wonderful meal that was zero stress to make.
Scones are easy to prepare and freezes well. You can make a dozen then freeze then and only bake what you want each time. Salads, soups, eggs are quick meals that take very little time to prep and cook. Cooking does not have to be complicated. Eggs for dinner or lunch is a real thing here in Italy. A fritta paired with a salad and a glass of wine is a wonderful and memorable meal. Potato hash is also an easy and quick prep meal that is both nutritious and satisfying. Cooking for all is possible.
