Ingredients

1 Egg Beaten
6 tbsp Plain Yogurt Mix together with egg
400 mL Vegetable Stock Hot
3 large Scallion Finely chopped
1 tsp Rosemary Finely chopped
TT Salt
1 1/2 tsp Red Pepper Flakes
350g Couscous

      Couscous

      Add hot stock to couscous in a large bowl. Cover and set aside.

      Yogurt

      Beat egg and yogurt together

      2-3 minutes

      Mix

      Uncover couscous, add scallions, rosemary, pepper flakes and cheese to couscous along with the egg-yogurt mixture.

      Form fritters

      With slightly damp hands form fritters. Try to keep them relately flat for even cooking. You can use a ring mold.

      2-3 minutes per side

      Heat skillet

      Add 1 tbsp of oil to skillet over medium heat. Cook fritters browning them on each side. Serve immediately.
