1/4 cup Italian Cilantro lightly packed
1/4 vup Mint lightly packed
1/2 cup Roasted Shelled Pistachios
1 Garlic Cloves
1 oz Parmesan cheese
1 tablespoon Lemon Juice
1 teaspoon Lemon zest
3/4 cup Extra-Vergin Olive Oil
1/8 teaspoon Salt
Fresh Cracked Pepper

Mint Cilantro Parsley Pesto


      What gives this pesto its unami punch is the mint. The mint doesn't overwhelm the other flavors in the pesto. Instead the mint makes the pesto refreshingly light.
