3.5C dashi
1/2C Extra Firm Tofu Diced
4tbs miso I like folden miso but red is great too
1/2C Diced Zucchini
2 tbs Scallion
1/2tsp Diced Thai Chilli Adjust to taste

      A combination of summer squash, firm tofu and spring onions

      Miso is to Japanese cooking culture what butter is to French cooking or Olive oil to Italian cooking. Miso soup can never be boring because it ingredients are limited only by the imagination of the chef.  Miso soup is one the most versatile soup you can make based on what is available during each of the four seasons.

      Base

      Warm up dashi to a simmer. DO NOT let the dashi boil or you will change the flavor.

      Miso

      Add enough broth to the miso in a bowl to form a soupy mixture and add to warm dashi.

      Serving

      In each bowl place equal amounts of diced tofu, squash and scallion and chilli

      Pour miso broth into each bowl and serve immediately.
