Soba Noodles in Beef Broth with Pickled Vegetables

      In the winter I live to drink soup. Lately I have craving Asian flavors. This weekend I decided to play around with making a rich stock to compliment soba noodles. The addition of the pickled vegetable put this dish over the top for me.

      Steps

      1 hour

      Broth

      In a medium stock pot add broth, galangal root, sesame oil, soy, fish stock, red chili, lime zest

      Bring broth to a boil then lower heat to the very low flame and let seep for 30 mins

      Turn of fire and let sit for at least one hour. The long the better so to build up the flavors.

      Strain broth and return to the pot. reheat gently the broth

      Cook soba noodles seperately

      Divide soba noodles into four bowls

      Pour warm stock into the noodles. Top with Pickled vegetables and radishes.

      You can serve with a wedge of lime and cilantro
