Simple doesn’t mean cheap
I am firm believer in keeping things simple. With the temperatures in the high nineties on a daily basis my kitchen and I have to be on friendly terms at all times. During the day when the sun is at its most intense I like to stay indoors and relax. My pantry and I become partners in crime as I still want to eat well. Eggs and what every I have in my fridge create a lunch time menu that embraces all the things I love about Italy.
A spinach fritta paired with pane Toscano and a nice table Chardonnay makes a quite but satisfying lunch time meal. The addition of marinated feta only adds to the overall pleasure of hazy lazy summer days. Pantry staples like peanut butter are transformed into Pad Thai and my nights become a little exotic.
Three ingredient shortbread cookies take on an air of whimsy when pair with homemade raspberry jam. A just like that a few pantry staples and inexpensive ingredients are transform into my own little bistro menu for under ten euro probably more like five euro if you already have wine at home. Simple never means cheap but it does mean delicious.
