What To Cook Now…Seasonal Cooking…Fall
With the changing of the seasons. The question, “what to cook now?” is never far behind. When the first golden leave falls in front of my feet and an invisible breeze blows upon my skin, I know it has started. As the caramel colored leave does a dance at my feet, I realize that summer has ended, but something more beautiful has just began. There is just something about autumn that makes me want to wrap myself up on a couch with a cup of delicious tea.
What I love about this season is the variety of meals one can try, while using ingredients that are perfectly in season. One of the best meal enhancements when you are wanting a warm and comforting meal is a broth. You can take a simple meal, add a delicious broth to it and you have a meal with intense flavors that soothes the soul. Here are some of my tried and tested recipes which are inclusive of very different, yet delicious broths.
Another comforting food to experiment with this autumn is different types of seafood. Many of us opt for cold dishes during the summer months, but nothing is tastier than a spicy, yet delicate piece of seafood. Do not get stuck on simply eating fish, but rather explore other options, like shrimp, mussels and even calamari. These are familiar options and all you have to do is infuse your dishes with warm flavor tones.
Even though it is not winter yet, a delicious curry would be a must on a colder autumn night. Imagine lighting a fire and some candles with the aroma of warm spices filling your house. It sounds like pure heaven to me. Every season brings about its own feel and autumn is definitely one of those seasons that just gets you all cosy and warm.
While on the subject of a warming curry, autumn is a great time to bring out those soup recipes. Soup is definitely not reserved for winter only, but makes for a delicious lunch or dinner. It is healthy and comforting without much effort. You can whip up a soup in no time. It can be fancy with a lot of tasty ingredients, or a simple weeknight soup that does not lack flavour. Here are some of my favorites.

Cooking with fruit and vegetables that are in season will enhance the taste of your meals and pack a lot of flavour. Here are some of the fruits and veggies that you should experiment this season.

These are all versatile and delicious ingredients to cook with this autumn. If you are new to cooking, I encourage you to try some of the fruit and veggies on this list and experiment a bit. It is surprising what one can create when the moment is right. Use these in season ingredients as inspiration to create beautiful and unique dishes.
In Italy we await the harvest of fresh produce that comes with this season. By the time winter hits, we will be filling up on a lot more olive oil and meats, but autumn allows us to enjoy the freshness of what the season brings. Do not stop at using the conventional button mushrooms this season, but spread your cooking wings and try some wild mushrooms for an exotic taste.
Vino Novello, which is known as a young wine typically, goes on sale during these autumn months. The taste is fruity and might contain some fine bubbles. You have to uncork this wine shortly after production, but it makes for a great paring wine with some of the hearty meals. Although this wine is traditionally consumed on the evening of the 11th of November, it does not mean that you cannot enjoy it before or after that specific date.
Enjoy this new season full of wonder and mystical colors. Create some exciting new meals to enjoy with your loved ones. Even though summer is over, it is definitely a time to be happy and enjoy what the change of a season can bring. New beginnings and starting over are just some of those.
